Pop-in-your Mouth Peanut Butter Cups!

It’s Friday night. My daughter and her friend were hanging out downstairs in our rec room. I heard them come upstairs and root around in the cupboards and pantry, all the while muttering things like, “There’s no junk in this house!” (there isn’t) and “I’m soo hungry!” Now that I can help with.

I had purchased little Paper Foil Condiment Cups from the local dollar store this week and had been toying with the idea of making peanut butter cups. I had a large container of smooth peanut butter from Walmart that my family was not happy about and I knew I could use that as the base.

Instead of spooning a blob of PB into the little cups, I used a little cake decorating bulb thinking that the base would be beautiful and fairly even. Boy, was I wrong! The swirls came out haphazardly and although they were somewhat presentable, that whole process was pointless! So in the future I will use a spoon to drop blobs of PB into each cup. 1 teaspoon per cup is more than enough.

I piped the soft peanut butter into each cup. What was I thinking? They would only get covered by the chocolate!

I took 1 cup of milk chocolate chips and heated them for 30 seconds in the microwave, stirred the chips and then put them back in for another 15 seconds or so, stirring until they were smooth. I used the second decorating bulb for the chocolate and topped the peanut butter with it. The chocolate was smooth and silky. So once I had covered the PB completely, I took a toothpick and spread the chocolate to coat evenly. Note: Don’t work too vigorously as the foil cups are pretty flimsy and will easily lose their shape!

I popped them into the freezer for about 15 minutes and VOILA! The two 15 year-olds who had been foraging in my kitchen just minutes ago came running when I told them what I concoction I had just pulled from the freezer.

The nicest thing is that while I was sitting at my laptop writing this blog, I received a text from the girls (technology has made us lazy) asking if they can come upstairs and get some more. Asking for seconds? My job here is done…drop the mike!
