
The top of these squares forms a beautiful crust while the bottom collapses a little, allowing you to peek into the squares and view the peachy goodness inside! Made in one bowl in three easy steps, you will be going back to this recipe time and time again.
Ingredients
2 cups White Sugar
2 Eggs
1 cup Vegetable Oil
1 teaspoon Vanilla Extract
2 cups All-Purpose Flour
1 teaspoon Baking Soda
1 tablespoon Cinnamon
Canned Peach Slices/Confectioners’ Sugar
Preheat Oven to 350 degrees Fahrenheit.
Whisk the sugar, eggs and oil together for about a minute until thickened and consistent.

Add the vanilla. In a separate bowl, whisk the flour, baking soda and cinnamon together, then add to the wet ingredients all at once. Use a rubber spatula and work the dry and wet together to create a thick consistency. It won’t take very long.

Pour the batter into a greased cake pan. This portion is not huge and in the small 9′ x 9′ pan I used, it makes a thin bottom layer. Gently pat the dough down. It is thick and settles into place fairly well.

Arrange some peach slices on the top in any formation. Don’t press the fruit down. The dough will rise and cover the peaches and they will appear to “sink” a little, giving you caves where the fruit is.

Slide into preheated oven onto middle rack and set the timer for 35 minutes. This cake can also need up to 45 minutes. So after 35 minutes, check with a cake tester. You will have to pierce the crust a little to test the middle of the cake, but this is a fairly moist batter, so it will need a while.

The cake doesn’t look beautiful when it first comes out. After it has cooled throughly (best when completely cooled for a few hours), dust with confectioners’ sugar to brighten it up a bit. The crust is a little hard to cut. But that is part of it’s charm. Crusty exterior and soft, gooey centre.
