
I had a recipe that I found a while ago that turned out really well for me. So I decided to make my own puree. I roasted a Cinderella Pumpkin and a Blue Jarrahdale and made my own puree from them. Each had its own flavours and sweetness. But the Jarrahdale took hours to roast and I don’t think I will repeat that process since it was so time-consuming.

Instead of making your own puree, canned puree works well!
This portion makes 2 large round cakes or loaves.
INGREDIENTS
2 large Eggs
2 cups Sugar
1 1/2 cups Vegetable Oil
2 cups Pumpkin Puree
2 cups flour
1 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1 teaspoon of Cloves/Nutmeg/Cinnamon
1 teaspoon Orange zest
1 cup Walnut pieces or Pecan pieces
Preheat oven to 350 F
Combine dry ingredients until combined. Set aside. In a large bowl, beat eggs, sugar and oil on medium until combined for about 1-2 minutes. Add the pumpkin puree and mix for another 30 seconds or so, scraping the sides to ensure that the puree is evenly distributed. Add the dry ingredient mixture and mix on low, scraping the sides again until evenly combined. Turn off the mixer and add the orange zest and nuts, folding in gently with a rubber spatula.
I used my round cake pan and a loaf pan and greased both well. Fill the forms you are using and pop into preheated oven for 45 minutes. I had sprinkled some Skor pieces and pumpkin seeds on top as garnish to give it a little beauty! Use a cake tester. If the cake is not done, bake for another 10-15 minutes, checking in between. I made this recipe several times. The first time it baked out just as timed. The second time my puree must have had more moisture in it. So I had to bake an hour and fifteen minutes. Every oven is different. So it is best to check once you can smell the spices as they are baking.
This cake is best left to cool and then served room temperature with a generous dollop of whipped cream! My in-law’s approved this cake by the way! I hope you do too!
