Coconut Tea Squares

The Mennonite Treasury of Recipes was a well used baking resource in our family growing up, with stained, well worn pages to prove it. Although I have an updated version of this recipe book, this recipe has been marked as a go-to for me and is found in the Squares and Slices portion on page 161.

Ingredients:

1 cup All-Purpose Flour

2 tsp. Baking Powder

1/2 cup Sugar

1/2 tsp. Salt

1/4 cup Shortening

2 Eggs, separated

1/4 cup Milk

1 cup Jam- strawberry or raspberry work best

1/2 cup Sugar

1 tsp. Vanilla

1 cup Coconut

*preheat oven 350F

Sift dry ingredients together. Cut in shortening. Beat egg yolks together with milk. Add to dry ingredients and mix. This will create a soft biscuit dough.

Pat into round pie pan or 8” square which has been well-buttered.

Pat the dough into the pan and spread with jam.


Beat the egg whites until stiff. Add sugar, vanilla and coconut. Spread on top of the jam.

Bake approximately 40 minutes until the top is golden. Best served completely cooled. Keeps well for a few days!
