
My variation of an apple cake that we made in Home Ec class at Virgil Public School, this blend of apples, cinnamon and sugar is the perfect dessert for Thanksgiving and Christmas. (Good also in July as my youngest daughter is waiting patiently for her favourite cake to come out of the oven as I am writing this blog!) Baked in a pie pan, it looks like a pie and is served in pie slices with a scoop of vanilla ice cream or a dollop of freshly whipped cream.
Ingredients:
2 large apples of any kind- peeled, cored and roughly chopped.
1 cup white sugar, 1 cup brown sugar
1 cup vegetable oil
2 eggs
2 cups all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. cloves
Preheat oven to 350 degrees Fahrenheit
One large mixing bowl and one smaller bowl for dry ingredients is required. Place flour, baking soda, cinnamon and cloves in one bowl. Lightly mix with a spoon, taking care to lift the ingredients to let the air in. Barely mix, just until the cinnamon and cloves seem to be worked through.

In the mixing bowl, add eggs, oil, both sugars and whisk by hand until smooth, about one minute.

Add all the dry ingredients to the wet and mix with rubber spatula until everything has been mixed in (about 1-2 minutes). Then add the chopped apples and work through gently.
Grease pie plate and put the dough (very thick) into the pan and distribute evenly. Shake a bit of coarse sugar onto the top if desired.

Bake on middle rack for 45-55 minutes until toothpick comes out clean in centre. The top should have a nice light brown crust to it.
Let the “pie” cool for about 15 minutes before serving. We enjoy it cooled off completely as the brown sugar gives it an almost caramel flavour and the flavour of the apples and the spices have a chance to marry. 10 minutes prep – 2 bowls to clean plus utensils! Enjoy! Lolita
Note: Freezes well in air tight container and wrapped in plastic wrap. You can add walnuts and raisins if desired for a more festive dessert!
